Just like back then, the harvest is traditionally done by hand. The core principle is nature-friendly, sustainable viticulture, consciously avoiding the use of herbicides, chemical-synthetic pesticides, insecticides, and commercial fertilizers. Instead, the winery focuses on its own compost production for organic fertilization of the vineyards.
