Enjoy a 5-course menu with wine pairing and experience the stories behind the wines up close. The Taubenschuss Winery is a monument in the Weinviertel and has been around since 1670. Just like back then, the harvest is traditionally done by hand. The core principle is nature-friendly, sustainable viticulture, consciously avoiding the use of herbicides, chemical-synthetic pesticides, insecticides, and commercial fertilizers. Instead, the winery focuses on its own compost production for organic fertilization of the vineyards.

Sustainable vineyard grazing with the help of special sheep has also been successfully practiced for several years, which reduces the need for machinery in the vineyard in the long run. The winery is currently in the transition phase towards organic certification.
